The harvest begins with advanced machinery that gently shakes the olive trees, allowing the olives to fall into nets placed around the tree. Speed is essential to ensure that the olives are processed while still fresh, guaranteeing the best possible oil extraction.


2. Transport and Milling: Time is Essential

Once harvested, the olives are quickly transported to the mill to be processed within a maximum of 24 hours. This ensures the fruit is in its optimal freshness when processed. The milling process crushes the olives into a paste, which is then gently mixed to release the oil.
