It is an extra virgin olive oil produced in an extreme climate , where the daily thermal oscillations exceed 20ºC, with winter minimums bellow -15⁰C and summer maximums that can exceed 40ºC.

This causes our production of olives of the ARBEQUINA variety to be limited . As a counterpart, we obtain an oil with very aromatic fruitiness and a percentage of healthy fatty acids higher than the average for its variety.
